Egg Casserole

  • Servings: 8


  • 1 dozen eggs
  • 1 tsp salt
  • 2 cups frozen hash browns, thawed
  • 1 cup cheddar cheese
  • 1 cup plain yogurt
  • 3/4 stick butter
  • 1/4 cup chopped onion


  1. Preheat oven to 350 degrees F.
  2. Beat eggs, yogurt, and salt together.
  3. Melt butter and lightly saute onions. Add hash browns and mix.
  4. Pour into egg and yogurt mixture and lightly stir to blend ingredients.
  5. Pour into casserole dish.
  6. Sprinkle cheese over casserole.
  7. Bake for 25 minutes or until a poked knife comes out clean.
