Ingredients
- 3 ears of sweet corn cooked, cooled slightly
- 1 red bell pepper, diced
- 1 minced jalapeno without seeds
- 1/2 red onion, finely chopped
- 1 pt cherry tomatoes, halved
- 2 limes, juiced
- 1/4 cup extra virgin olive oil
- 1/4 cup cilantro
- salt & pepper to taste
Directions
- Cut corn off the cob.
- Mix corn, peppers, jalapeno, onion, and tomatoes together in a bowl.
- Add lime juice and olive oil (to taste).
- Last minute add cilantro and salt & pepper.
