Corn Salad

Ingredients

  • 3 ears of sweet corn cooked, cooled slightly
  • 1 red bell pepper, diced
  • 1 minced jalapeno without seeds
  • 1/2 red onion, finely chopped
  • 1 pt cherry tomatoes, halved
  • 2 limes, juiced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup cilantro
  • salt & pepper to taste

Directions

  1. Cut corn off the cob.
  2. Mix corn, peppers, jalapeno, onion, and tomatoes together in a bowl.
  3. Add lime juice and olive oil (to taste).
  4. Last minute add cilantro and salt & pepper.
