Sweet Potatoes with Pecans

    *4 lbs sweet potatoes
  • 5 Tbls butter
  • 2/3 cup brown sugar
  • 1/2 cup orange juice
  • 1 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 1/4 cup bourbon
  • 2 cups mini marshmallows
  • 1/2 cup pecan pieces


  1. Cook unpeeled potatoes with salt. Bring to boil, reduce heat and simmer for 25 minutes or until tender.
  2. Drain and let cool.
  3. When cool, peel and slice into 1/4″ thick slices.
  4. Layer potato slices in a greased casserole dish.
  5. In a small saucepan, combine butter, sugar, orange juice, cinnamon, nutmeg, ginger, salt, & bourbon.
  6. Bring mixture to a boil and cook for about 2 minutes.
  7. Pour mixture over potatoes.
  8. Bake uncovered at 350 degrees F. for 40 minutes. or until brown.
  9. Increase heat to 500 degrees F and top with marshmallows and pecans.
  10. Cook for 5 minutes or until golden brown.
